Simple Pumpkin Cake

I'm not a pumpkin pie fan, so this and double layer pumpkin cheesecake (with whipped cream, not whipped topping) are the pumpkin desserts I prefer.

Before baking:
Take 1 cup of a yellow cake mix and set aside

Crust:
Place the rest of the yellow cake mix in a bowl and add ½ cup melted butter and 1 egg. Pat into a greased 13x9 pan.

Filling:
Mix the following together:
2 cups pumpkin
1/2 tsp pumpkin pie spice
½ cup brown sugar
2 eggs
2/3 cup evaporated milk
Pour over crust

Topping:
1 cup of yellow cake mix
¼ cup sugar
1 tsp. cinnamon
¼ cup butter, softened.
Mix and crumble on top of the filling.
Bake at 325 for 45 to 60 minutes. It is done when it pulls away from the sides and a toothpick comes out clean from the center of the pan.

Serve warm with a dollop of whipped cream.

Dad's Christmas Morning Coffeecake

Serve with...hot cocoa!

Cake:

2 cups flour
1 cup sugar
3 tsp. baking powder
1 tsp. salt
1/2 cup butter
2 eggs
1 cup milk


Mix all together and put in 9x13” greased pan.


Topping:

2 TB melted butter
2/3 cup sugar
3 tsp. cinnamon
2/3 cup chopped nuts (optional)

Mix and sprinkle on top of cake batter.


Bake at 375 degrees for 20 mins. (Serves 12).
