I have perfected turkey meatballs.
Preheat oven to 375 degrees
Combine well:
1 lb lean ground turkey
shredded/grated veggies--I usually do carrot and spinach (sorry I have no exact measurement for this yet. I just grab a couple handfuls of baby carrots and spinach and put them through my grating food processor)
2 eggs
1/8 c minced onions
1 TB parsley
1/2 TB oregano
1/2-3/4 tsp salt
1/2 tsp pepper
1 clove garlic, minced (I usually just sprinkle garlic powder)
Using a small cookie dough scoop, make them into balls and put them in a 13x9 glass dish (no need to grease the dish). They shrink as they cook. Cover with foil and cook for about 40 min.
