Cornbread (or Corn Cake, more like)

Mix:
1/2 cup butter, melted
2/3 cup sugar

Add:
2 eggs
1 cup buttermilk (I do 1 cup milk + 1 TB vinegar if I don't have buttermilk)
1 cup flour
1 cup cornmeal
1/2 tsp soda
1/2 tsp salt

Mix well, scraping sides and bottom of the bowl.

Pour into an 8x8 greased pan. Bake at 350 degrees for 35-40 minutes (until knife inserted in it comes out clean).

(For a lighter cornbread try half buttermilk and half plain yogurt. Also half butter and half oil.)
